&lt;p&gt;&amp;#8220;Just a quick note to thank you for the Flavours of Mexico class last Tuesday. I really enojoyed it, and I am glad I have finally learnt to make tortillas and have tasted tomatillos, which I heard so much of.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;We had a great time at your Mexican class on Tuesday &amp;#8211; such amazing flavours! We loved the freshness of the jicama slaw so we&amp;#8217;ll have to get to Borough soon to pick up some jicama. We&amp;#8217;re going to make some flour tortillas and &amp;#8216;the best ever guacamole&amp;#8217; tonight to show off to our friends &amp;#8211; will send photos if we remember to take some in between eating! &amp;quot;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thanks for the great Sichuan class the other week &#8211; last night I went to Chinatown and stocked up so dan dan noodles will become a regular feature in my life! Let me know your Chinese class schedule as I&#8217;d love to learn about dumplings next&amp;#8230;&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I took your Moroccan cooking class and really enjoyed it &amp;#8211; thank you!  I have already successfully made the scallops and chermoula.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I meant to drop a line to say how much I enjoyed the knife skills class. I am still practising away to try and rid of some bad habits I had picked up. Easier said than done but getting there! I will check your schedule to choose my next class.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I have been meaning to write and say how much we enjoyed our Moroccan class with you. Such good quality ingredients, teaching, cooking and atmosphere. Thank you.&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;I really enjoyed the Korean cooking class I did last year, have made the mandoo a couple of times since&amp;#8230; Hopefully will be able to take another of your classes at some point this year &amp;#8211; am already badgering my brother for another gift voucher.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thanks so much for a great class last night! I found it really fun and informative and the food was to die for. I&amp;#8217;m looking forward to trying out the recipes at home.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I came to one of your classes with my sister a while ago.  We both had an amazing, inspiring time. We think you&amp;#8217;re great and enjoy your newsletters too!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I attended your fantastic Korean class last week with my friends. Many thanks for the class -I have already made the tartare at home.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;We came to a vegetarian cooking course a while back now, and have since been living in Austria.  Thanks to the recipes we learnt and a new passion for food discovered, we became known amongst the international circle for our great dinner parties as &amp;#8216;the British who don&amp;#8217;t cook like most British&amp;#8217;. Many couldn&amp;#8217;t even tell that the recipes were vegetarian, and asked how we got so much flavour into the dishes (&amp;#8221;how you put taste of meat in meal? Is so good!&amp;#8220;).&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I have an addiction problem. Since the Flavours of Mexico class, I have now made (with some modifications from time to time) your &#8220;authentic Guacamole&#8221; more than 38 times. People are getting concerned about the habitual air of garlic and coriander which seems to pervade my life if not emanate from all pores ; I have repetitive strain injury  (&lt;span class=&quot;caps&quot;&gt;RSI&lt;/span&gt; also known as &amp;#8220;Raver&amp;#8217;s wrist &#8220; ) from spending too much time with the mortar and pestle and I have now become a chilli groupie growing more than 5 varieties on the window sill but also haunting Borough Market for new and unexplored dried oddments. I have only you to blame for this addiction but am optimistic that once my son Morgan takes your Vietnamese class that I may shift my affliction to lemon grass.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Just a quick mail to say thank you so much for a fab night on Tuesday. I really enjoyed it! It&amp;#8217;s really great to see someone so enthusiastic and passionate about food &amp;#8211; it was a real pleasure to have you share your knowledge with us. I&amp;#8217;m feeling very inspired and am hoping to get brave enough to try some of the recipes, which is a huge credit to you, as I am terrified of cooking! Keep me posted if you&amp;#8217;re doing any other vegetarian classes &amp;#8211; would love to come again.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Really enjoyed the course on Wednesday.  Very inspiring &amp;#8211; we&amp;#8217;re making Dan Dan noodles for dinner today!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I just wanted to say how much I enjoyed the Vietnamese and Laos cooking lesson and I have already made the chicken and asparagus recipe at home and it was again, fantastic!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I wanted to thank both you and your assistant for making it such a fun and delicious evening; it was a feast for my senses &#8230;.. and stomach!  And a very big thank you for introducing me to those wonderful cocktails &amp;#8211; I think I&amp;#8217;d better stock up on tequila!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I attended your knife skills course a while back and enjoyed a wonderful day. Since then I signed up to receive your newsletter and continue to be inspired by your travels and recipes.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I just wanted to send an email to say thanks very much for a fun Tuesday evening and sorry I was late again &amp;#8211; I&amp;#8217;m glad however that I still got to have my tamarind martini &amp;#8211; yum ;-) I know the others really enjoyed themselves and Nicola&amp;#8217;s even been out on her shopping trip to buy her Asian supplies! It was so refreshing to see how excited and passionate you are about your food, and will definitely keep an eye on your classes.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I just wanted to say thank you so much for the great &amp;#8216;Cuisine of Burma&amp;#8217; class last night. I think we all had a fantastic time &amp;#8211; and were definitely all stuffed at the end of it! I&amp;#8217;m not enormously confident in the kitchen (hence my friends buying me the voucher), but you made the recipes seem so simple that I&amp;#8217;m determined to try them again at home!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thank-you for the class yesterday &amp;#8211; I really enjoyed it. I came straight home and made the avocado soup for my husband. I will definitely be booking in for one of your other courses later in the year so keep me posted on what&amp;#8217;s happening. Thanks again &amp;#8211; I came home feeling very relaxed and enthused &amp;#8211; it was like a spa day only with better food!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thanks for the fantastic class this evening, I really enjoyed it and definitely learned a lot which I can use to impress people when they come round for dinner!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I had a great time in your Mexican and Handmade Pasta classes recently. I made the biscotti this weekend except I used almonds and 5 spiced coffee. Here&amp;#8217;s a photo.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I just wanted to send you a quick email to say thank you for such a delicious and enjoyable evening, I loved every minute of it &amp;#8230; especially the eating!    I can&amp;#8217;t wait to recreate all the dishes at home. Thanks again, and for the chili-spiked grapefruit margarita &amp;#8211; I&amp;#8217;m hooked!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Together with my partner Marion we&#8217;ve been to a couple of your fantastic courses, most recently the Persian one which still has us swooning.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;My husband and I really enjoyed the course yesterday. The pasta was yummy. I made the Biscotti in the evening and I mixed the pistachio with some hazelnuts and they came out brilliantly. I gave some to our neighbour who loved them too. Brilliant class &amp;#8211; thanks again.&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;I recently attended your Asian Fusion class. Just wanted to say a big thanks &amp;#8211; really enjoyed the class and the food afterwards. I learnt quite a bit, even though I cook a lot, so really worthwhile. I&amp;#8217;m sure I&amp;#8217;ll be back at some point.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thanks again for the fantastic class on Sunday &amp;#8211; had a blast!  Went home and felt like chopping so I made a big pot of borscht!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I attended your knife skills class a few weeks back and really enjoyed it. In fact it was so much fun that bang bang chicken featured for dinner last night, including perfectly cut cucumber and carrots! Thanks very much and the class was excellent.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I really enjoyed last night and am glad I chose the class. The mussels, the squid and the beautiful scallops are great party dishes.  You&amp;#8217;re a good teacher and the atmosphere was great.  So I am very much looking forward to the next lesson.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I had a great evening, I can&amp;#8217;t wait to start shopping for those Thai ingredients!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;We really enjoyed tastes of Szechuan last night!  I am now hankering for a spicy Margarita.  We&amp;#8217;re sorry about leaving our recipe booklets there. Please consider it a sign that by leaving something, we want to come back for another class sometime!&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;Thank you for an excellent class, we really enjoyed it and love the skills and recipes we learned.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I took one of your cooking classes (gastropub) a few years ago. It sparked a whole new era in my cooking enthusiasm and the subsequent efforts have brought joy to myself, my girlfriend and a host of guests/friends. I revisit your recipes regularly and I&amp;#8217;d be keen to hear what classes there are in the near future as a new injection of ideas would not go amiss!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I thoroughly enjoy your newsletters and my daughter had a lot of fun at her fish cookery evening &amp;#8211; though I yet have to taste anything she learned to cook.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I just wanted to say that I enjoyed the last course (Modern British cooking) very much and I have already cooked two of the courses (flatbread and Dover sole) last Saturday. I booked the next course already (pasta) and will be bringing my husband along.&amp;#8221;&lt;/p&gt;

Will definitely be booking another class in the not too distant future.&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;I made the salmon gravadlax yesterday and for the first time ever i toasted and ground spices in my spice grinder! I couldn&amp;#8217;t believe the difference in the smell as the spices came through &amp;#8211; i can understand why you prefer grinding your own &amp;#8211; it smells so good! It feels good to be in the kitchen!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thank you for another superb evening. I was overwhelmed by a great desire to eat the sweet potato dish again so had to make it the next day &amp;#8211; and that was after school parents evening !!! My friend Jane is doing the whole set of dishes for some vegetarians for Sunday lunch this weekend.&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;On Saturday morning I went out to that Persian Shop on Holloway Road and bought all the ingredients for the meal we learnt on Wednesday. I made it all yesterday, and my partner and I were amazed by the results. The rice worked perfectly, and I got a delicious, crispy and golden tahdig, I was so proud. The lamb and aubergine was also delicious, we were eating until 1am!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;You are awesome! I can&amp;#8217;t thank you enough for Tuesday night&amp;#8217;s &amp;#8216;Help! I Can&amp;#8217;t Cook Anything!&amp;#8217; class. I was absolutely terrified when I first walked into your loft before the class started, but enjoyed it so much more than I thought possible and left in such a good mood, I still smile when I think about it. I walked home so happy about having attended, that I wish the class had gone on for a couple more hours, at least!  I can&amp;#8217;t wait to be able to take more classes of yours. I absolutely loved the class and I think it was during arguably the simplest dish we made, the tomato and chorizo salad, when I had the conscious thought of &amp;#8220;wow, this looks and tastes amazing and I made this&amp;#8221;. I can&amp;#8217;t wait to be able to take more classes of yours. Thanks again and I should be in another class in a couple of weeks!&amp;quot;&lt;/p&gt;

&lt;p&gt;&amp;#8220;Just a note to say how much I enjoyed the How to Cook Fish II evening with you. We were received well and I thoroughly enjoyed your menu and the way you conducted the evening. I was very hungry to start with, but was contentedly replete at the end of my visit. I have cooked your recipes since I returned home and my friends think they are superb!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;A belated thank you for the class How to Cook Fish class last week &amp;#8211; we thoroughly enjoyed ourselves and it made for a very memorable evening out. You were very knowledgeable and helped us learn a lot in a fun and relaxing way. We will certainly be trying out the recipes at home.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I came to your class on the Food of Laos and Vietnam last week and thoroughly enjoyed the experience. I&amp;#8217;m not a very experimental cook usually, but seeing how simple and fun some of these dishes can be to make really inspired me. I also enjoyed the opportunity to reminisce about my travels to both those places. It was nice to meet you and thank you for a great evening!&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;I would just like to say that I had a brilliant time at the Spicy foods course on Wednesday and the food we made was the best Thai food I have ever tasted! I am a bit of a foodie so I have been to a few Thai restaurants (Thai Square, Windsor being my favourite). I cannot wait to make these dishes for my husband, as soon as I have located a Thai supermarket near our house. The soup was to die for, as was the prawn curry. Definitely recommend to anyone &amp;amp; can&amp;#8217;t wait to put my new skills to the test!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I would just like to say that I had an excellent time on Friday &#8211; very interesting and relaxed! I will certainly recommend this class to my friends and hopefully see you again in the future. Once again thanks. Good times.&amp;#8221;&lt;/p&gt;

We loved every minute of your class and the food was so different from what we are used to cooking and sooo tasty &amp;#8211; we just thought the whole experience was fab! &lt;p&gt;&amp;#8220;I sent my friend to one of your courses a while ago as a birthday present and he hasn&amp;#8217;t stopped talking about it since.  I have sampled some of the recipes you taught him and was very happily convinced. Plum sangria, dandelion salad with sheep&amp;#8217;s milk cheese and then chickpea flour pizza &amp;#8211; amazing!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Just a quick note to say Thank You for last night. It was wonderful meeting you and you made us feel very welcome. We are both looking forward to trying out your delicious recipes really soon. Not sure which dish was my favourite, they were all great!!&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;I had a great time on Wednesday, the Vietnamese food was delicious, and your way of explaining things very clear and easy to follow!  I look forward to the next session.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I just wanted to say that I really enjoyed last night and cannot wait to buy the sherry at the weekend and wolf down the lot with a huge tub of vanilla ice cream!!&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;Just a quick note to thank you for a really good course on Sunday. My knives are sharper and though I&#8217;ve been close to a couple of cuts, feel that my technique is definitely improved. A comment from a friend for whom I cooked dinner tonight &#8211; my diced courgettes provoked specific praise for their even cutting! I&#8217;ve never had that kind of compliment before.&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;My friend and I had a fantastic time last night and I&amp;#8217;ve been telling everyone at work today how good it was. You have a great thing going there..looking forward to the next one!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;I attended your Indian fish and seafood course a few weeks back and the class was awesome. I haven&amp;#8217;t had the chance to try the recipes out myself just yet but rest assured I will be shortly!&amp;#8221;&lt;/p&gt;
&lt;p&gt;&amp;#8220;Thank-you so much for last Tuesday&#8217;s class.  I couldn&#8217;t get over how incredibly delicious the food was and can&#8217;t wait to make some of the recipes again.&amp;#8221;&lt;/p&gt;

He loved the classes and really enjoyed them- he has basic knowledge of cookery but heaps of passion and interest in learning. He has really enjoyed the classes which started off as gifts for his 40th birthday last year. Also really enjoy your news letter and pass it onto anyone i can think of. &lt;p&gt;&amp;#8220;Just to say thanks for a really enjoyable evening during your Bali and Indonesia course earlier this week.  I thought it was great, and very inspiring, and I really enjoyed how we all got to taste and smell a variety of key ingredients.  I also loved your tips on where to source all this stuff&amp;#8212;in fact I just got back from an excursion to China Town where I picked up all sorts of delightful things.  I&amp;#8217;ll be making Rujak and the prawn curry over the weekend!  I thought the food we made was delicious, and am very excited about the ingredients I just picked up.&amp;#8221;&lt;/p&gt;

We really enjoyed the whole experience &amp;#8211; meeting a few locals, learning about your different ingredients, and the class itself gave us some great ideas!  I even went to the Borough Market on Saturday and found the Vincotto and Nigella Seeds so that I can re-create the recipes we prepared (I loved the salad one with the squash and figs)! &lt;p&gt;&amp;#8220;Just a note to say how much we all enjoyed your cooking lesson a few weeks ago. I made the chicken marinated in garam masala and yoghurt last week and it was a great success &amp;#8211; so easy even my domestically challenged housemate is now making it solo (he&amp;#8217;s added it to his repertoire of three dishes).  I&amp;#8217;ll recommend he goes along to one of your lessons himself!&amp;#8221;&lt;/p&gt;

People are getting concerned about the habitual air of garlic and coriander which seems to pervade my life if not emanate from all pores ; I have repetitive strain injury  (RSI also known as &quot;Raver's wrist &#8220; ) from spending too much time with the mortar and pestle and I have now become a chilli groupie growing more than 5 varieties on the window sill but also haunting Borough Market for new and unexplored dried oddments.
