Food of Laos and Vietnam
Combining a unique balance of hot, sour, salty and sweet, the food of Laos and Vietnam is bright, colourful and full of fresh flavours that many European travellers to the region have grown to love.
In this class we’ll explore some of the herbs, sauces and pastes that make this style of cooking and eating unique and cook our way through a number of dishes that showcase the balancing and contrasting flavours, tastes and textures that are typical of the cooking of this part of South East Asia.
We’ll learn about the spice mixtures, herbs and techniques that make Laotian and Vietnamese cooking special and discuss the best places in London to shop for spices and ethnic ingredients.
Some of the dishes we’ll learn include:
Pomelo Salad with Dry Roasted Peanuts
Prawn and Green Mango Rice Paper Rolls
Roast Snapper in Banana Leaves with Pepper and Coriander Root Paste
Chicken Curry with Coconut Milk and Fresh Turmeric
