India has one of the world’s most diverse regional cuisines with a fascinating range of vegetables, herbs, and spices on its culinary doorstep.

In this class we’ll leave ‘Chicken Tikka Masala’ behind and explore fresh and contemporary Indian cuisine. We’ll learn about toasting and grinding our own spice blends and about classic Indian ingredients like curry leaves, fresh coconut and mustard seeds.

We’ll also talk about the best places in London to shop for spices and ethnic ingredients.

Some of the dishes we’ll learn include:

Yoghurt and Spice Roast Prawns with Fresh Coconut Chutney
Parathas Stuffed with Spice Roast Cauliflower
Dry Pumpkin Curry with Cumin and Curry Leaves
Chicken Curry with Ginger and Sour Mango
